Instant fruity sorbet (traditional method & Thermomix)
Description
As much ice cream as the kids want... but this time without the guilt! This homemade sorbet is 100 % natural, made almost entirely from fruit. I made it for my boys and it was an instant success. The advantage: you can vary the fruit (strawberries, apricots, raspberries, blueberries, etc.) and syrups to suit your taste. You can also adjust or even omit the sugar and syrup for an even lighter version - my boys prefer it that way.

- TRADITIONAL METHOD
Preparation (traditional method)
1. Place the frozen fruit in a high-performance blender.
2. Add the syrup and icing sugar. Blend at maximum speed until smooth.
3. Gradually add the egg white while continuing to blend, until the mixture is frothy and light.
4. Serve immediately, or transfer to a container and freeze for up to 1 hour before serving.
Tip: The sorbet hardens quickly in the freezer. I therefore recommend preparing it just before serving. If you have any leftovers, pour them into ice-cream moulds to make delicious ice lollies.
THERMOMIX® METHOD
Preparation (Thermomix version)
1. Place the sugar in the bowl and spray for 10 sec / speed 10. Scrape down the sides.
2. Add the frozen fruit and syrup, then blend for 40 sec / speed 8.
3. Insert the whisk attachment, add the egg white and beat for 30 sec / speed 4.
4. Serve immediately.
