Description

I think I've already mentioned that my youngest loves fish - especially when it's accompanied by broccoli. So I'm always on the lookout for simple, tasty ideas for combining these two ingredients in family recipes. This quiche was born out of that desire: a shortcrust pastry delicately flavoured with dill, fresh salmon fillets, little broccoli florets and a melting mixture. All baked in the oven for a complete meal, as delicious warm as cold. It's sure to become a spring classic, served as a light lunch, picnic or dinner with a salad.

  1. TRADITIONAL METHOD
    1. Mix the flour, finely chopped butter, salt and cold water by hand or in a food processor until smooth. Add the chopped dill and knead briefly.
    2. Strain and leave to rest in the fridge for 30 minutes.
    3. Cut the broccoli into florets and steam or boil for about 5 minutes to keep them firm. Drain and set aside.
    4. Cut the salmon fillets into pieces.
    5. In a bowl, whisk the eggs with the cream, milk, chopped dill, nutmeg, salt and pepper.
    6. Roll out the pastry and line a tart tin (about 25 cm in diameter) with it.
    7. Sprinkle the grated cheese over the tart base. Arrange the salmon pieces and broccoli florets. Pour the quiche mixture over the top.
    8. Bake in a preheated oven at 190°C for 35 to 40 minutes, until the quiche is golden brown.

    THERMOMIX® METHOD
    Thermomix version
    1. Place 2 tablespoons of dill in the bowl and blend for 5 seconds on speed 10. Set aside without rinsing the bowl.
    2. Prepare the dough: place the flour, butter, salt and water in the bowl. Blend for 1 second / 5 times. Add the reserved dill and blend for 5 seconds / reverse / speed 2.
    3. Form into a ball, wrap and leave to stand in a cool place for 30 minutes.
    4. Pour 500 ml of water into the bowl. Place the broccoli florets in the Varoma and cook for 5 mins / Varoma / speed 1. Drain.
    5. Place the eggs, cream, milk, dill, nutmeg, salt and pepper in the bowl. Blend for 20 seconds on speed 3.
    6. Roll out the pastry and line a 25 cm tin.
    7. Sprinkle the grated cheese over the base, arrange the salmon pieces and broccoli, then pour over the mixture.
    8. Bake for 35 to 40 minutes at 190°C in the preheated oven.
