Description

Olivier salad, also known as «Russian salad», is a classic dish served at buffets and picnics. Invented in the 19th century by a Belgian chef working at the prestigious Hermitage restaurant in Moscow, it has since travelled around the world and exists in many variations. Here, I offer you a family-friendly version inspired by Iranian cuisine, fresh and nourishing, perfect for a picnic, barbecue, or lunch to take to the office or school. Rich in vegetables and protein and seasoned with a creamy yoghurt and lemon sauce, it is a complete salad that is always a pleasure to eat.

  1. TRADITIONAL METHOD
    Preparation (traditional method)
    1. Cook the potatoes with their skins on in salted water. Allow to cool slightly, peel them and then cut them into cubes.
    2. Shred the chicken meat and place it in a large salad bowl with the potatoes.
    3. Add the gherkins, spring onions, eggs, coriander and peas. Mix gently by hand or with a large spoon.
    4. In a small bowl, prepare the sauce by mixing together the mayonnaise, lemon juice, Greek yoghurt and olive oil. Season with salt and pepper to taste.
    5. Pour the dressing over the salad, mix well and leave to chill before serving.
    Tip: don't throw away the chicken bones! They are perfect for making homemade chicken stock to freeze, which is ideal for soups or risottos.
