Vegetarian Caesar salad (traditional method & Thermomix)

Description

Caesar salad is a classic that is loved the world over. This vegetarian version retains all its deliciousness with its creamy sauce, crunchy croutons and Parmesan shavings, but without anchovies or meat. Perfect for a light lunch, picnic or buffet, it's easy to prepare and always a hit!

  1. TRADITIONAL METHOD
    Preparation (traditional method)
    1. Croutons: Brown the bread cubes in the oil in a frying pan for around 3 minutes, then drain on kitchen paper.
    2. Dressing: Place the egg, grated Parmesan, capers, mustard, Tabasco (optional), lemon juice and garlic in a blender. Blend until smooth.
    3. While continuing to blend, drizzle in the oil to obtain a creamy mayonnaise-type sauce. Season with salt and pepper.
    4. Assembly: Place the salad in a salad bowl, add the vinaigrette, toss and garnish with the croutons and Parmesan shavings.
    5. Serve immediately.
    Tip: if you're taking the salad on a picnic, keep the dressing, croutons and salad separate and put them together at the last minute to preserve their freshness.

    THERMOMIX® METHOD
    Preparation (Thermomix method)
    1. Weigh out 150 g of oil and set aside.
    2. Place 25 g of Parmesan cheese in the bowl and chop for 5 seconds/speed 10. Set aside.
    3. Place 1 clove of garlic and 2 teaspoons of capers in the bowl and chop for 5 seconds/speed 10. Scrape down the sides.
    4. Add 1 egg, ½ teaspoon mustard, a few drops of Tabasco sauce, the juice of 1 lemon to taste, salt and pepper. Blend for 1 minute 30 seconds / speed 4, pouring the reserved oil very slowly onto the lid so that it drips down and creates an emulsion.
    5. Mix the dressing with 2 lettuce hearts and croutons made from 4 slices of bread, then sprinkle with 25 g of Parmesan shavings.
