White bean salad (traditional method & Thermomix)

Description

Perfect for a salad bar, picnic, barbecue or simply as a side dish, this white bean salad has become a classic in our house. It's quick to prepare, can be made ahead of time and always seduces with its creamy, tangy dressing and a hint of chilli.

  1. TRADITIONAL METHOD
    Traditional preparation
    1. Place the beans, onions, chopped parsley and chilli flakes in a large salad bowl.
    2. In a bowl, combine the crushed garlic, lemon juice and tahini. Add the olive oil and red wine vinegar, then season with salt and pepper. Emulsify well.
    3. Pour the vinaigrette over the beans and toss gently.
    4. Taste and adjust seasoning if necessary.
    5. Leave to rest in the fridge for a few hours before serving, to allow the flavours to develop.

    THERMOMIX® METHOD
    Thermomix preparation
    1. Place the parsley and garlic in the bowl and chop for 5 seconds on speed 8. Scrape down the sides.
    2. Add the lemon juice, tahini, olive oil, vinegar, salt and pepper: 10 sec / speed 6.
    3. Combine the beans, onions and chilli flakes in a bowl.
    4. Pour the vinaigrette over the top and toss gently.
    5. Leave to macerate in the fridge for a few hours before serving...
