Description

My brother-in-law's godmother gave me this recipe for little brioche sandwiches, which used to be famous in a shop in Moulleau. Since the shop closed, enthusiasts have continued to recreate their own version. These gourmet morsels with tomato and homemade mayonnaise are perfect for a summer aperitif, a chic picnic or an elegant buffet.

  1. TRADITIONAL METHOD
    Preparation - Traditional method
    1. Place the egg and mustard in a bowl.
    2. Whisk vigorously with a mixer or hand whisk, then pour in the oil in a very fine stream while continuing to whisk, until you have a firm mayonnaise.
    3. Add salt and pepper to taste.
    4. Spread the slices of brioche bread with mayonnaise.
    5. Add thin slices of tomato.
    6. Close with another slice of bread and cut into small triangles.

    THERMOMIX® METHOD
    Preparation - Thermomix method
    1. Place a carafe on the lid of the bowl, weigh out the oil and set it aside.
    2. Insert the whisk attachment. Add the egg, mustard, salt and pepper to the bowl.
    3. Blend for 1 min 30 sec / speed 4 and slowly pour the oil over the bowl lid so that it drips into the bowl in a thin stream.
    4. Spread the bread slices with mayonnaise, add tomato slices and assemble.
    5. Cut into small triangles and serve...
