Italian-flavoured Tramezzini sandwiches
Description
These little Italian-inspired sandwiches are not only pretty to look at, they're also deliciously refined. With their colourful layers of red and yellow tomatoes, fresh basil and Parmesan, they bring a touch of sunshine to your aperitifs, picnics or summer buffets. A simple recipe that combines freshness, Mediterranean flavours and elegance in just a few simple steps.

- TRADITIONAL METHOD
Preparation (traditional method)
1. Peel and halve the tomatoes, remove the seeds and dice finely.
2. Wash and finely chop the basil.
3. In a bowl, whisk the butter with the Parmesan until creamy.
4. Divide the mixture in two:
o Add the basil and yellow tomatoes to one half,
o Add the red tomatoes and tomato purée to the other.
Season each preparation with salt and pepper.
5. Quickly brown the slices of bread in a frying pan without fat (they should remain supple and not be too coloured). Leave to cool.
6. Spread two slices of bread with the basil butter and one slice with the tomato butter.
7. Assemble: place the slice topped with tomato butter between the two slices topped with basil butter, then finish with a plain slice.
8. Plant 6 toothpicks at regular intervals and cut into 6 equal parts.
