Description

When I was little, my mother often made these absolutely divine sandwiches. They're exquisitely light and make the most of simple but fresh ingredients. In our house, everyone loves them: even my 4-year-old, who usually shuns raw vegetables, is happy to eat them! Proof that presentation and simplicity can appeal to even the youngest eaters. These sandwiches are perfect with soup, for a picnic or a light summer meal.

  1. TRADITIONAL METHOD

    Preparation - Traditional method

    1. Cook the eggs with this fabulous tip, which means you get perfectly cooked eggs every time without the dark circle around the yolk, which I don't find very attractive.Then refresh them under cold water, remove the shells and slice them.

    2. Spread mayonnaise on the slices of bread (not too little, not too much, just to add flavour).

    3. Lay out a salad leaf, then add the sliced vegetables, cheese, ham and finally the slices of hard-boiled egg.

    4. Season with salt and pepper.

    5. Close the sandwich with another slice of bread.

    6. Serve immediately, ideally with a soup or green salad.
