Description

These egg salad sandwiches are perfect for a quick lunch, a tasty snack or a sophisticated afternoon tea. It's a simple filling that's popular with children and adults alike, keeps well and can be prepared in advance. It's also one of the essentials often found in surprise breads for children's birthdays.

  1. TRADITIONAL METHOD
    Preparation - Traditional method
    1. Cook the eggs in a pan of boiling water for 10 minutes. Drain, run under cold water, shell and leave to cool.
    2. Mash the eggs in a bowl with a fork. Add the mayonnaise, yoghurt, curry powder, salt and pepper. Mix well.
    3. Spread the slices of bread with this mixture. Garnish with thinly sliced radishes and sprinkle with dill.
    4. Cover with the remaining slices of bread.
    5. For an afternoon tea, remove the crust and cut each sandwich into 4 regular rectangles.

    THERMOMIX® METHOD
    Preparation - Thermomix method
    1. Pour 500 g of water into the Thermomix bowl, place the eggs in the cooking basket and cook for 15 min / Varoma / speed 2.
    2. Remove the eggs, run them under cold water, shell them and leave to cool.
    3. Place the shelled eggs, mayonnaise, yoghurt, curry powder, salt and pepper in the bowl and blend for 4 seconds on speed 4.
    4. Then proceed as for the traditional method to fill and cut the sandwiches...
