Oven chicken nuggets with parmigiana (traditional method & Thermomix)
Description
Homemade nuggets, browned in the oven, with tasty Parmesan breadcrumbs. It's a simple, family-friendly recipe, with no waste thanks to the use of stale bread. These crispy nuggets are a light, tasty alternative to industrial versions. They appeal to children and parents alike, and allow you to use hard bread and give it a second life. Baking them in the oven means that they don't need to be fried, while still retaining a golden brown texture. Serve with yoghurt sauce, sweet mustard or ketchup.

- TRADITIONAL METHOD
Preparation - Traditional method
1. Preheat the oven to 230°C (fan oven). Line two baking trays with lightly oiled baking paper.
2. Grate the Parmesan. Blend the stale bread into coarse breadcrumbs. Mix with the herbes de Provence.
3. Prepare three plates:
o 1st: flour + salt + pepper
o 2nd: beaten eggs
o 3rd: Parmesan breadcrumbs
4. Bread the chicken pieces: flour → eggs → breadcrumbs.
5. Arrange on the baking trays, drizzle the olive oil over the nuggets and turn them over to coat well.
6. Cook for 10 mins, turn over and cook for a further 8-10 mins. Serve hot.
THERMOMIX® METHOD
Preparation - Thermomix version
1. Place the Parmesan in pieces in the bowl: 10 sec / speed 10.
2. Add the dry bread in pieces: Turbo mode 0.5 sec, up to 10 times, until coarse crumbs are obtained.
3. Add the herbs: 5 sec / speed 4 → Transfer.
4. Beat the eggs by hand.
5. Prepare the breadcrumbs on three plates as described above.
6. Bread the chicken, arrange on the baking tray, drizzle with olive oil and coat well.
7. Cooking time: 230 °C fan oven, 10 min, turn over and cook for a further 8-10 min. Serve hot.
