Austrian cucumber salad (traditional method & Thermomix)

Description

During cucumber season, this salad is a must in Austria. Fresh and flavoured with dill, it goes perfectly with many dishes, especially breaded meats such as the famous Viennese schnitzel. Simple to prepare, it keeps well in the fridge and always adds a touch of lightness to summer and winter meals alike.

  1. TRADITIONAL METHOD
    Preparation (traditional method)
    1. Peel the cucumbers and cut them into thin slices (ideally using a mandolin).
    2. Place them in a salad bowl, season generously with salt and leave to drain for 1 hour. Drain thoroughly.
    3. Prepare the sauce: mix together the sour cream, crème fraîche, crushed garlic, finely chopped dill, lemon juice, salt and pepper.
    4. Add the well-drained cucumbers, mix gently and serve chilled.

    THERMOMIX® METHOD
    Preparation (Thermomix method)
    1. Peel and slice the cucumbers into thin strips (preferably using a mandolin). Salt and leave to drain for 1 hour, then drain well.
    2. Place the garlic and dill in the bowl: 5 seconds/speed 8.
    3. Add the sour cream, crème fraîche, salt, pepper and lemon juice: 10 seconds/speed 3.
    4. Mix the sauce with the drained cucumbers and serve.
