Description

All my life, I've had an enormous - I'd go so far as to say inordinate - weakness for tomatoes. They are to me what bread is to others: an essential, an obvious, a summer and winter love.
Of course, I never say no to a tomato-mozzarella... but this one? This one is my Holy Grail.
Melt-in-the-mouth burrata, colourful heirloom tomatoes, crunchy pine nuts, and above all - above all! - a basil and garlic vinaigrette that makes the whole dish sing.

A quick reminder: never put your tomatoes in the fridge! They will lose their texture and, above all, their taste.

  1. TRADITIONAL METHOD
    Preparation - traditional method
    1. Prepare the vinaigrette
    Blend the garlic and basil leaves in a blender. Then add the sugar, salt, pepper, white balsamic and olive oil. Blend until the sauce is smooth and fragrant.
    2. Roast the cherry tomatoes
    Arrange the whole cherry tomatoes on a baking tray. Drizzle with olive oil and season with salt and pepper.
    ➤ Grill for 5 to 8 minutes at 200°C over a fan.
    3. Roast the pine nuts
    Heat a dry frying pan without fat and fry the pine nuts until lightly coloured. Put to one side.
    4. Prepare the tomatoes
    Cut the heirloom tomatoes into medium-thick slices (using a mandolin if possible) or into quarters to vary the texture.
    5. Dresser
    Arrange the tomato slices on a large platter. Place the burrata in the centre. Sprinkle with the roasted pine nuts, salt, pepper and basil leaves.
    Drizzle generously with homemade vinaigrette.
    ➤ The vinaigrette can be kept for up to 2 weeks in the fridge.

    THERMOMIX® METHOD
    Thermomix variant
    1. Vinaigrette with Thermomix
    Place the garlic and basil leaves in the bowl.
    ➤ Mix for 10 sec / speed 8.
    Scrape down the sides and add sugar, salt, pepper, white balsamic vinegar and olive oil.
    ➤ Mix for 15 sec / speed 6.
    2. Roasting, roasting, cutting, dressing
    ➤ Proceed as for the traditional method.
