Dark chocolate ice cream (traditional method & Thermomix)
Description
My youngest son and I are big fans of chocolate ice cream. After a lot of trial and error, we've finally come up with the recipe we both love: a super-smooth ice cream with a touch of crunch thanks to the coarsely chopped chocolate. Whether you make it by hand or with the Thermomix, this recipe is simple, tasty and 100 % homemade.

- TRADITIONAL METHOD
Preparation - Traditional method
1. Heat the milk in a saucepan.
2. In a bowl, beat the egg yolks with the sugar and vanilla.
3. Slowly whisk in the hot milk, then pour back into the saucepan.
4. Heat over a medium heat, stirring continuously, until the cream thickens (without boiling).
5. Remove from the heat and stir in the 130g of dark chocolate cut into pieces and leave to melt.
6. Allow to cool completely.
7. Gently fold the whipped cream into the cooled chocolate mixture.
8. Pour into an ice-cream maker. After 30 minutes, add the 20g of chopped chocolate.
9. Keep turning until you reach the desired texture.

Tip without an ice cream maker
1. Prepare the ice base as described above.
2. Pour the cooled cream into an airtight tin (large enough to allow expansion).
3. Freeze for 1 hour.
4. Remove and beat vigorously with a whisk, electric mixer or hand blender.
5. Repeat the operation every hour for 4 to 6 hours to obtain a fine, pleasant texture.

THERMOMIX® METHOD
Preparation - Thermomix version
1. Place the 130g of dark chocolate in the bowl and blend for 7 sec / speed 10. Scrape down the sides.
2. Add the milk, cream, sugar, vanilla and egg yolks.
3. Cook for 8 mins / 90°C / speed 2.
4. Transfer to a container, cover with cling film and leave to cool completely.
5. For a lighter texture, you can whip the cream separately without the Thermomix and then fold it in by hand once the chocolate cream has cooled.
6. Pour the mixture into an ice-cream maker. After 30 minutes, add the 20g of chopped chocolate and complete the whirling process.
