Vegetarian Mediterranean wrap with avocado (traditional method & Thermomix)

Description

A well-stuffed wrap is often the ideal solution when you want to eat something fresh, filling and quick to prepare. Here, the tomato-basil hummus adds a gourmet touch and is a great substitute for any industrial sauce. The crunchy vegetables add texture, the avocado melts in the mouth - and the whole thing looks as good as it tastes.

Tips

  • These wraps keep very well wrapped in cling film or baking paper for a picnic or an office lunch.
  • You can adapt the vegetables to suit the season: grated courgettes, finely sliced red cabbage, cooked beetroot in thin strips...
  • Tomato-and-basil hummus adds texture, flavour and beautiful colour - turning a simple wrap into a complete, balanced meal.

  1. TRADITIONAL METHOD

  2. Preparation - traditional method

  3. 1. Blend all the ingredients together.
  4. Place the chickpeas, lemon juice, tahini, garlic, oil, sun-dried tomatoes, basil, sugar, salt and pepper in a blender. Blend until smooth and creamy.
  5. 2. Adjust the texture
  6. Gradually add water (30 to 45 ml) until you achieve a light and creamy consistency, according to your taste.
  7. Preparing the wraps

  9. Grate the carrot into julienne strips.
  10. Cut the cucumber and pepper into thin strips or small sticks.
  11. Cut the avocado into strips or mash coarsely with a fork.
  12. Drizzle the avocado with lemon juice and season with a little salt.
  13. 4. Softening the wraps
  14. Lightly heat the patties in a dry frying pan or in the oven for a few minutes to make them softer and easier to roll.
  15. 5. Assemble
  16. Spread each patty generously with tomato-basil hummus.
  17. Add the avocado.
  18. Divide among the vegetables and rocket.
  19. Season with salt and pepper if necessary.
  20. Roll up tightly, folding in the sides slightly if desired.
  21. Cut in half and serve immediately.

  24. 1. Blend
  25. Place all ingredients in the Thermomix bowl (except the water) and blend for 15 to 20 seconds / speed 7.
  26. 2. Adjust the texture
  27. Add a little water depending on the desired consistency, then remix briefly if necessary.
  28. 3. Preparing the vegetables
  29. Grate the carrot into julienne strips.
  30. Cut the cucumber and pepper into thin strips or small sticks.
  31. Cut the avocado into strips or mash coarsely with a fork.
  32. Drizzle the avocado with lemon juice and season with a little salt.
