Velouté with peas (traditional method & Thermomix)
Description
Frozen peas, always available in the freezer, are transformed in no time at all into a refined, fragrant and brilliantly coloured soup. This creamy soup is quick to prepare and adds a touch of freshness thanks to the mint. Served with toasted bread, it's a simple, convivial treat!

- TRADITIONAL METHOD
Traditional preparation
1. Peel and chop the onion and garlic. Brown them in a casserole dish with a little oil.
2. Add a pinch of sugar, then the peas, and simmer for 3-4 minutes.
3. Pour in the vegetable stock and cook for around 10 minutes.
4. Set aside a few peas to garnish.
5. Add the crème fraîche to the rest and blend finely.
6. Season with salt, pepper and nutmeg (optional).
7. Garnish with the reserved peas, mint and a little chopped chilli. Serve immediately.
THERMOMIX® METHOD
Preparation with the Thermomix
1. Place the onion, garlic and a little oil in the bowl and chop for 3 seconds on speed 5.
2. Fry for 10 mins / 120°C / speed 1, without measuring cup.
3. Add the peas and a pinch of sugar and fry for a further 4 mins / 120°C / speed 1, without a measuring cup.
4. Add the water and stock and cook for 15 min / 100°C / speed 1, using the measuring cup.
5. Reserve some of the peas for decoration, then add the cream, nutmeg and pepper. Blend for 1 min on speed 6-10, gradually increasing the speed.
6. Decorate and serve immediately...
