Coral lentil velouté (traditional method & Thermomix)
Description
Coral lentils are one of the most nutritious legumes: rich in fibre, protein, iron and folate, they are also very low in calories. This tomato and coral lentil soup is an ideal recipe for a quick, simple and nutritious evening meal. In my house, the whole family loves it - even the homeless group in my parish, for whom I regularly prepare large quantities. A hearty, healthy and comforting dish that's also easy to freeze so you always have some on hand.

- TRADITIONAL METHOD
Traditional preparation
1. Heat the oil in a large saucepan.
2. Fry the diced onion and celery for about 5 minutes.
3. Add the lentils and cook for a further minute, stirring constantly.
4. Stir in the tomatoes, water, stock, herbes de Provence and pepper.
5. Bring to the boil and then simmer for around 20 minutes, stirring occasionally, until the lentils are tender.
6. Blend with a hand blender until velvety.
7. Serve piping hot, garnished with chopped parsley if desired.
Tip: this velouté is perfect for freezing!
THERMOMIX® METHOD
Preparation with the Thermomix
1. Pour the sunflower oil into the Thermomix bowl and heat for 3 mins / Varoma / speed 1.
2. Add the onion and celery, blend for 5 sec / speed 5, then fry for 5 min / Varoma / speed 1.
3. Add the lentils and stir for 1 min / Varoma / speed 1.
4. Stir in the tomatoes, water, stock, pepper and herbes de Provence. Simmer for 20 minutes at 100°C on speed 1.
5. Blend for 30 sec, gradually increasing from speed 4 to speed 8.
6. Serve immediately...
