Description

Fruit tart is a classic pastry. It appeals with its perfect balance of light biscuit, creamy pastry cream and colourful fresh fruit decoration. Ideal as a summer dessert, for a birthday, afternoon tea or simply as a treat, it also allows you to vary the fruit according to the season.

  1. TRADITIONAL METHOD
    Preparation - traditional method
    1. The biscuit:
    • Preheat the oven to 200°C (static heat).
    • Beat the eggs, water, sugar and vanilla for 5 to 7 minutes, until the mixture is very frothy.
    • Sift the flour with the baking powder, then gently fold in the oil with a spatula.
    • Pour into a greased mould and bake for 15 minutes. Leave to cool on a wire rack.
    2. The pastry cream:
    • Put the milk, flour, whole eggs, egg yolks, sugar and vanilla in a saucepan.
    • Cook over medium heat, stirring constantly, until thickened (approx. 7 minutes).
    • Whisk off the heat, pour into a salad bowl, cover with cling film and leave to cool.
    3. Fruit decoration:
    • Spread the cream over the cooled tart base.
    • Arrange the fruit harmoniously: strawberries in petals, apricots in the centre, kiwis in leaves, a few blueberries for contrast.
    4. The topping:
    • Mix the juice, sugar, lemon and agar-agar together while cold.
    • Bring to the boil and boil for 2 minutes.
    • Allow to cool for 1 minute, then pour gently over the fruit or apply with a brush. Refrigerate.

    THERMOMIX® METHOD
    Preparation - Thermomix method
    1. The biscuit:
    • Insert the whisk (butterfly).
    • Place the eggs, water, sugar and vanilla in the bowl.
    • Whisk for 8 minutes / 37°C / speed 4, then 2 minutes / speed 4 without heating.
    • Remove the whisk, add the flour, baking powder and oil.
    • Mix for 15 seconds / speed 2, or mix by hand.
    • Pour into a greased mould and bake for 15 minutes at 200°C. Leave to cool.
    2. The pastry cream:
    • Place all the ingredients in the bowl.
    • Cook for 7 minutes at 90°C on speed 4, then blend for 5 seconds on speed 5.
    • Pour into a salad bowl, cover with cling film and leave to cool.
    3. Fruit decoration:
    • Spread the cream over the cooled biscuit.
    • Arrange the fruit as desired: strawberries, apricots, kiwis, blueberries.
    4. The agar-agar topping:
    • Put the juice, sugar, lemon and agar-agar in the bowl.
    • Cook for 3 minutes at 100°C on speed 3, then for 2 minutes at 100°C on speed 2.
    • Allow to cool for 1 minute, then pour immediately over the fruit or apply with a brush. Refrigerate.
