Description

A bowl of freshness and balance! This revisited Poké Bowl combines scampi, fragrant rice, edamame and crunchy vegetables, all topped with a subtle sauce made from soy, ginger and sesame oil. Inspired by Asian flavours, it is ideal for a healthy, elegant and convenient lunch to take away. In our house, it quickly became a family favourite — even my husband, a big sushi lover, is crazy about it.

  1. TRADITIONAL METHOD
    Preparation - traditional version
    1. Wash the rice in cold water until the water runs clear.
    2. Place the rice in a saucepan with 150 ml of water. Cover and bring to the boil.
    3. Reduce heat to low and cook covered for 10–12 minutes, until all the water has been absorbed. Remove from heat and let stand for 10 minutes.
    4. Bring a small saucepan of water to the boil. Cook the edamame for 2–3 minutes, drain and set aside.
    5. In a bowl, mix together the soy sauce, sesame oil, rice vinegar, ginger and honey.
    6. To assemble the poké bowl:
    • Place the rice at the bottom of a bowl,
    • Add the scampi, carrot, cucumber, edamame and avocado.,
    • Drizzle with sauce, then garnish with sesame seeds, spring onion, and pieces of nori if desired.

    THERMOMIX® METHOD
    Preparation - Thermomix version
    1. Pour 1000 g of water into the mixing bowl and add a little salt. Place the rice in the cooking basket and the edamame beans in the Varoma. Cook for 20 minutes/Varoma/speed 4.
    2. Allow the rice and edamame to cool slightly.
    3. Empty the bowl, add the soy sauce, sesame oil, rice vinegar, grated ginger and honey. Mix for 10 seconds / speed 4.
    4. Assemble the poké bowl as you would using the traditional method.
