Panini Caprese
Description
The Panini Caprese is an Italian summer classic: soft bread, fragrant pesto, melting mozzarella, fresh and sun-dried tomatoes, and a few basil leaves... Simple, quick and always a hit. Perfect for a quick lunch, a picnic or a light dinner with a salad. If you make the panini bread yourself, the result will be even tastier - the recipe is here and can be made in the Thermomix or by hand. Tip: For an even more delicious touch, you can lightly rub the inside of the bread with a clove of garlic before spreading the pesto.

- TRADITIONAL METHOD
Preparation - Traditional method
1. Cut the bread: slice each panini bread in half lengthways.
2. Garnish: spread the pesto generously over the base. Top with slices of mozzarella and fresh tomatoes.
3. Add: a few sundried tomatoes and basil leaves. Season with salt and pepper.
4. Grill: close the panini and place in a panini press (or contact grill) until the cheese has melted and the bread is lightly browned.
