Description

One of my fondest childhood memories is of my father preparing slices of golden semolina for us in a frying pan. This simple dish, served warm with a little compote, is a real delight. In Austria, it is sometimes served as a main course, especially if soup precedes it. Its quick preparation and readily available ingredients have long made it a classic dessert in Austrian middle-class families.

Instructions

  1. TRADITIONAL METHOD
    Traditional preparation
    1. Bring the milk, butter, sugar, lemon zest and salt to the boil.
    2. Pour in the semolina while whisking, then continue cooking over a medium heat until you obtain a thick paste.
    3. Remove from the heat and leave to cool for 5 minutes.
    4. Whisk 2 eggs into the mixture.
    5. Pour the mixture into a cake tin lined with cling film. Leave to cool for 2-3 hours in the fridge.
    6. Unmould and cut into slices that are not too thin.
    7. Beat the remaining 2 eggs. Mix the breadcrumbs with the cinnamon. Dip the semolina slices in the egg and then in the breadcrumbs.
    8. Brown the slices in butter in a frying pan for 2 minutes on each side.
    9. Sprinkle with icing sugar if desired and serve warm with compote.
