Description

Light, fragrant, golden - irresistible I love these little patties as a light lunch or as a starter at a friendly dinner party with friends. Fried, crispy on the outside, soft on the inside - they combine melting potatoes, salted feta, fresh dill and a squeeze of lemon. A real nod to Greek cuisine, to be enjoyed with or without a white BBQ sauce.

  1. TRADITIONAL METHOD
    Preparation - Traditional method
    1. Peel and dice the potatoes and cook in boiling salted water until tender. Drain.
    2. Mash while still warm in a bowl.
    3. Add the crumbled feta, green onions, dill, lemon juice and egg, season with salt and pepper and mix well.
    4. Cover and leave to firm up in the fridge for 30 minutes.
    5. Using damp hands, shape into 12 small balls and then flatten slightly into patties.
    6. Dredge in flour and fry in hot oil until golden brown on both sides.
    7. Drain on kitchen paper and serve immediately.

    THERMOMIX® METHOD
    Preparation - Thermomix method
    1. Place 500 g of water in the bowl, insert the cooking basket filled with the diced potatoes. Cook for 25 mins / Varoma / speed 1.
    2. Remove the cooking basket, leave the potatoes to cool and then mash them by hand to retain their texture.
    3. Place the dill in the empty bowl and chop for 10 seconds on speed 10. Transfer to another bowl.
    4. In a clean, dry bowl, crumble the feta cheese, add the green onions, dill, mashed potatoes, lemon, egg, salt and pepper. Blend for 15 sec / reverse / speed 3.
    5. Set aside in the fridge for 10 minutes, shape into patties, flour and fry in oil on both sides. Serve hot.
