Baked cod with lemon and garlic sauce
Description
If you are looking for a simple and sophisticated way to cook cod, this dish is for you. In just 15 minutes, you can enjoy tender, flavourful fish topped with a lemon and garlic sauce that everyone at the table will love. Serve with seasonal vegetables or a little rice for a complete, light, family-friendly meal.

- TRADITIONAL METHOD
Preparation (traditional method)
1. Preheat the oven to 200°C.
2. In a shallow bowl, mix together the lemon juice, olive oil and melted butter. Set aside.
3. In another bowl, mix the flour with the spices, salt and pepper.
4. Dip the cod pieces first in the lemon sauce, then in the flour mixture. Set aside the rest of the lemon sauce for later.
5. Heat 2 tablespoons of olive oil in an ovenproof frying pan over medium heat. Sear the fish quickly on both sides, just to give it a nice colour.
6. Mix the chopped garlic into the rest of the lemon sauce and pour it over the fish.
7. Bake for about 10 minutes, until the fish flakes easily with a fork (check to see if it is cooked through).
8. Sprinkle with chopped parsley just before serving.
