Austrian-style spring tzatziki (traditional method & Thermomix)
Description
Fancy a breath of spring on your table? This Austrian-style tzatziki combines the creaminess of Greek yoghurt with the crunch of radishes and the fragrant flavour of wild garlic. Delicious on crusty bread, it is ideal for an Easter brunch, a light aperitif or simply a sunny meal.

- TRADITIONAL METHOD
Preparation - Traditional method
1. Finely dice the radishes and cucumber. Set aside some of the radishes for decoration.
2. Finely chop the watercress, parsley, wild garlic and chives.
3. In a salad bowl, mix together the Greek yoghurt, crème fraîche, mustard and lemon zest.
4. Stir in the chopped herbs, diced cucumber and radish. Season with salt and pepper.
5. Garnish with the reserved radish cubes.
Tip: For those who prepare in advance, add the radishes at the last minute so that they retain their colour and crunchiness.
THERMOMIX® METHOD
Preparation - Thermomix version
1. Place the watercress, parsley, wild garlic and chives in the bowl. Blend for 5 seconds/speed 6.
2. Add the yoghurt, crème fraîche, mustard, lemon zest, salt and pepper. Mix for 20 seconds / reverse direction / speed 2.
3. Stir in the diced cucumber and radish. Set aside a few radish cubes for decoration.
4. Decorate and serve chilled.
