Description

These courgette slices are a delicious alternative to the traditional sandwich: high in protein, easy to prepare and perfect for a quick weekday meal, picnic or lunchbox. Served hot, they're soft and melt-in-your-mouth; served cold, they're a convenient and tasty snack.

  1. TRADITIONAL METHOD
    Preparation - Traditional method
    1. Preheat the oven to 180°C. Butter and line a rectangular baking dish (approx. 30 x 20 cm).
    2. Peel and finely chop the garlic. In a large bowl, beat the eggs with the ricotta, cheese, ham, grated courgettes, garlic, dill, salt and pepper.
    3. Add the flour and baking powder, mixing gently until smooth.
    4. Pour the mixture into the mould and smooth the surface.
    5. Bake for 30 to 35 minutes, until the pastry is firm and lightly browned.
    6. Leave to cool slightly before slicing and serving.

    THERMOMIX® METHOD
    Preparation - Thermomix method
    1. Preheat the oven to 180°C and prepare a rectangular dish (30 x 20 cm).
    2. Place the garlic and dill in the bowl and chop for 10 sec / speed 10.
    3. Add the ricotta, eggs, grated cheese, grated courgettes, ham, salt and pepper. Blend for 5 seconds on speed 5.
    4. Add the flour and baking powder. Mix for 50 sec / reverse direction / speed 2.5 using a spatula.
    5. Pour the mixture into the tin.
    6. Bake for 30 to 35 minutes, until the top is golden and the pastry is firm.
