Homemade peach iced tea (traditional method & Thermomix)

Description

There's nothing like a large glass of homemade iced tea when the sun is beating down! This peach version combines the natural sweetness of ripe fruit, the freshness of mint and a touch of tart lemon. It's perfect for a picnic, afternoon tea in the garden or simply to cool off on a hot summer afternoon.

  1. TRADITIONAL METHOD
    Preparation - traditional method
    1. Prepare the peach syrup:
    Dice the peaches (no need to peel them). Place the peaches, honey and 250 ml of water in a saucepan. Bring to the boil, crushing the fruit slightly. Simmer for 10 minutes to extract the flavours.
    → Optional: strain through a sieve for a clear syrup (keep the pulp for yoghurt or compote).
    2. Prepare the tea:
    Heat 1.75 litres of water. Steep the 8 black tea bags for 6 to 8 minutes (depending on the desired strength). Remove the tea bags and leave to cool.
    3. Assemble :
    Mix the cooled tea, peach syrup, lemon slices and mint in a large jug.
    4. Serve:
    Pour into large glasses filled with ice cubes. Garnish with a slice of lemon, a slice of fresh peach and a mint leaf.

    THERMOMIX® METHOD
    Preparation - Thermomix method
    1. Peach syrup:
    Place the diced peaches (unpeeled), honey and 250 g of water in the bowl.
    Heat for 8 minutes / 100 °C / speed 1 (without measuring cup).
    Blend for 10 seconds at speed 5.
    → Optional: strain for a clear texture.
    2. Tea:
    Rinse the bowl. Add 1.75 litres of water and the tea bags.
    Heat for 7 minutes at 90°C on the spoon setting.
    Leave to infuse for 6 to 8 minutes, then remove the tea bags.
    3. Assemble :
    In a large jug, mix the tea and syrup. Add the lemon slices, mint and ice cubes.
    4. Serve:
    As above, decorated with fruit and fresh mint.
