Description

Skiing means cheese spätzle! In Austria, this comfort food is a classic served in mountain chalets. Cheese spätzle are soft, gratinated and delicious, and not only are they delicious, they're also great value for money. It's the perfect way to treat yourself without breaking the bank, and a winter favourite with all the family.

  1. TRADITIONAL METHOD
    Preparation (traditional method)
    1. Cook the spätzle in a large pan of boiling salted water. Drain carefully using a skimmer, then leave to drain in a colander.
    2. Melt the butter in a frying pan and fry the onion and spring onions until lightly browned.
    3. Butter an ovenproof dish. Arrange a layer of spätzle, then some of the onion mixture, and sprinkle with grated cheese. Repeat the operation, alternating layers until all the ingredients have been used up. Finish with a generous layer of cheese.
    4. Season with salt and pepper and place in a pre-heated oven at 180°C until golden brown on top.
    5. Sprinkle with fresh chives and serve immediately, ideally accompanied by a green salad.
    Tip: I like to serve a little vegetable soup beforehand, to add a fresh, light touch to the meal.
