Description

Very different from the soups I usually make, this Norwegian vegetable soup is perfect for a cosy dinner with friends. Mild and nourishing, it can be enjoyed as a vegetarian dish or enriched with prawns or fish (such as salmon) for a more substantial meal. A real treat from the North, simple to make and wonderfully warming.

  1. TRADITIONAL METHOD
    Preparation (traditional method)
    1. Peel the potatoes and carrots. Clean the leek and cut all the vegetables into evenly sized pieces. Peel and finely chop the onion.
    2. Melt the butter in a large saucepan. Add the vegetables and fry them for a few minutes over a high heat.
    3. Deglaze with the white wine, then add the water and stock cube. Simmer for about 20 minutes, until the vegetables are tender.
    4. Blend the soup until smooth. Season with salt, pepper and curry powder. If necessary, add a little water to adjust the consistency.
    5. Stir in the cream and serve piping hot. You can enjoy it plain or garnish it with prawns or pieces of fish.

    THERMOMIX® METHOD
    Preparation (Thermomix version)
    1. Melt the butter for 3 minutes/120°C/speed 0.5.
    2. Add the chopped onion, leek, carrots and potatoes. Sauté for 5 minutes / Varoma / speed 0.5.
    3. Deglaze with the white wine, add the water and stock cube, then cook for 25 minutes/120°C/speed 0.5.
    4. Blend gradually for 1 minute / speed 4 to 8.
    5. Add the salt, pepper and curry powder, then stir in the cream and blend for 15 seconds/speed 4.
    6. Serve immediately, plain or with pieces of prawns or fish.
