Mediterranean white bean salad
Description
This Mediterranean white bean salad can be prepared in no time at all - just 15 minutes! Colourful, crunchy and full of flavour, it combines the sweetness of white beans with the freshness of vegetables and aromatic herbs. Rich in fibre, protein, magnesium, folate and vitamin B6, white beans are a real health ally. It's a complete salad, perfect for a light lunch, to accompany a barbecue, a summer buffet or simply a family meal.

Preparation (traditional method)
1. Drain the white beans and place in a large salad bowl.
2. Add the cucumber, cherry tomatoes, olives, parsley and chopped mint.
3. Stir in the lemon zest and juice. Season with salt, pepper, sumac and crushed chilli.
4. Drizzle with olive oil and mix well.
5. Leave to rest in the fridge for at least 30 minutes before serving.
Serve chilled.
