Description

These cucumber rolls are a simple, healthy and elegant idea for your summer aperitifs. They combine the crunch of the cucumber with a creamy cream made from fromage frais and Greek yoghurt, spiced up with chives and perhaps a touch of chilli. A fresh, easy-to-digest appetiser that will win over your guests from the very first bite!

  1. TRADITIONAL METHOD
    Traditional preparation
    1. Mix the Philadelphia and Greek yoghurt in a bowl.
    2. Finely chop the chives, add to the mixture and season with salt and pepper.
    3. Using a mandolin, cut thin slices of cucumber lengthways. If they are too long, cut them in half.
    4. Spread a little cream cheese on each cucumber slice.
    5. Gently roll up the slices and arrange on a serving dish.
    6. Garnish with a few crushed chilli flakes and serve immediately.

    THERMOMIX® METHOD
    Thermomix preparation
    1. Place the Philadelphia and Greek yoghurt in the bowl: 30 sec / speed 4.
    2. Add the chopped chives, salt and pepper: 20 sec / reverse / speed 2.
    3. Using a mandolin, cut thin slices of cucumber. Cut in half if necessary.
    4. Spread the cheese mixture over each cucumber slice.
    5. Roll up and arrange on a plate. Sprinkle with chopped chilli pepper (optional)...
