Mashed potatoes with spinach, fish sticks & fried egg (traditional method & Thermomix)
Description
This dish is a classic in Germany and some neighbouring countries, and is particularly popular with children. While in many countries fish fingers are served with chips, peas or ketchup, in Germany they are almost always accompanied by creamy mashed potatoes, creamed spinach and a fried egg. It's a simple but irresistible combination that brings back childhood memories for many and remains a staple family meal.

- TRADITIONAL METHOD
Traditional preparation
1. Mashed potatoes: Peel and chop the potatoes into pieces. Cook them in salted water for approx. 20 minutes. Drain, then mash them with the hot milk, butter, salt and nutmeg. Mix until you have a smooth purée.
2. Creamed spinach: Finely chop the shallot and garlic. Heat the butter and oil in a frying pan, then fry the shallot and garlic. Add the flour, then deglaze with the cream and 100 ml water. Stir, add the spinach and simmer for approx. 5 minutes. Season with salt and pepper, then add a little nutmeg.
3. Fish sticks & fried eggs: Brown the fish sticks in a pan with a little oil or in the oven at 200°C for approx. 15 minutes. Fry the eggs in another pan.
4. Plating: Serve the mashed potatoes, add the creamed spinach, arrange the fish sticks and finish with a fried egg.
THERMOMIX® METHOD
Preparation with Thermomix
1. Place the chopped potatoes in the cooking basket, add 800 g water to the bowl and the spinach to the Varoma. Cook for 30 minutes / Varoma / speed 2. Collect the cooking water and empty the bowl.
2. Chop the shallot and garlic for 5 seconds/speed 5. Add the butter and oil and sauté for 3 minutes/120°C/speed 2. Add the flour and cook for 3 minutes/120°C/speed 2. Add the cream, 200 ml of the cooking water, salt, pepper and nutmeg. Cook for 5 minutes/100°C/speed 2. Add the spinach and blend for 5 seconds/speed 5. Taste and set aside.
3. Heat the milk for 3 minutes/100°C/speed 1, insert the whisk. Add the potatoes, butter, salt and nutmeg. Mix for 20 seconds/speed 3.
4. Cook the fish sticks in a frying pan or in the oven (200°C, 15 mins). Fry the eggs.
5. Serve hot.
