Fresh, light and very easy to prepare, this version of the famous Pimms is perfect for a summer aperitif, barbecue or dinner with friends.

  2. 1 Fill a large jug with ice cubes.
  3. 2 Add the strawberries, orange pieces, cucumber slices and mint.
  4. 3. pour in Pimm's No.1.
  5. 4 Top up with the chilled lemonade.
  6. 5 Stir gently and serve immediately.
  7. Advice
  8. The fresher and more fragrant the fruit, the better the cocktail.
  9. You can prepare the fruit in advance and add the ice and lemonade at the last minute.
  10. For a more British version, use Schweppes Lemonade.
  11. Canada Dry Ginger Ale adds a pleasant, slightly spicy note.
  12. The 7UP Lemonade gives a slightly sweeter, lemony version.
  13. Perfect for large summer tables or an English garden party aperitif.
  14. Organisation & advance preparation
  15. For a reception or communion, you can prepare all the fruit and herbs the day before.
  16. Personally, I chop the strawberries, cucumber, citrus fruit and mint in advance and store them separately in airtight bags or tins in the fridge.
  17. On the day itself, simply pour the Pimm's and lemonade into the pitcher, add the prepared fruit, then add the ice cubes at the last moment just before serving.
  18. I often do this before a mass or before the guests arrive: afterwards, there's hardly anything left to prepare.
