Express quiche dough (traditional method & Thermomix)
Description
There's nothing like homemade pastry to enhance your quiches and savoury tarts. This express version, flavoured with fresh herbs, can be prepared in just a few minutes. Whether you use a food processor, a Thermomix or just your hands, the result will always be tasty and much better than a store-bought pastry.

TRADITIONAL METHOD
Preparation - Traditional method
1. Wash, dry and finely chop the herbs.
2. In a bowl, combine the flour, salt and cold butter cut into cubes. Sand with your fingertips until you obtain a sandy texture.
3. Add the chopped herbs, then gradually stir in the cold water, mixing just until the dough forms a ball.
4. Flatten slightly, wrap in cling film and refrigerate for 30 minutes before use.
THERMOMIX® METHOD
Preparation - Thermomix method
1. Place the herbs in the bowl and chop 2 × 5 sec / speed 10. Set aside without washing the bowl.
2. Add the flour and butter to the bowl, mix Turbo - 1 sec / 5 times.
3. Add the water and mix Turbo - 1 sec / 5 times.
4. Stir in the reserved herbs for 5 sec / reverse / speed 2.
5. Wrap the pastry in cling film and refrigerate for 30 minutes before use.

It's been too long since I used your recipe... I love it!
This time I've added sage, chives and basil and I've made a mixture of wheat and spelt flour.
