Description

An ultra-classic German recipe that we love here: "Kartoffelpuffer" or "Reiberdatschi", pan-fried grated potato pancakes. You can find them at home, as street food at Christmas markets or village festivals, and always with a sweet or savoury side dish, depending on the region and taste. In our house, it's often with applesauce, as we used to do when I was little. There are variations with eggs, onions, flour... but this version is vegan and ultra simple, with just one main ingredient: the potato. And that's enough!

  1. TRADITIONAL METHOD
    Preparation
    1. Finely grate the raw potatoes, by hand or by machine.
    2. Allow the potato juice to run into the bowl. Mix well so that the natural starch helps to bind everything together.
    3. Add salt to taste.
    4. Form into small patties.
    5. Heat the oil in a frying pan (two pans if there are lots of you!).
    6. Place the patties on top, flatten them slightly and brown them on both sides.
    7. Drain on kitchen paper.
    8. Keep warm in a preheated oven (approx. 80-100°C).
    Serve straight away, that's how they taste best.
    In our house, it's with homemade apple compote that everyone enjoys their meal.
