Description

Caramel flan is a timeless dessert that we love with every bite. Its melt-in-the-mouth texture, delicate vanilla flavour and golden topping make it a timeless classic that's both simple and elegant. Here I show you the traditional bain-marie version, as well as the quick and successful Thermomix version. Both are a real hit! Make them in advance: they'll taste even better the next day.

  1. TRADITIONAL METHOD
    Traditional preparation
    1. Caramel
    - Melt the sugar and water over a medium heat until golden brown.
    - Pour immediately into the ramekins and tilt to coat the base. Leave to set.
    2. Cream
    - Heat the milk with the vanilla without bringing to the boil. Remove from the heat.
    - Beat the eggs, yolks and sugar together without frothing.
    - Gradually pour the hot milk over the egg mixture, stirring gently.
    - Strain through a sieve and divide between the ramekins.
    3. Oven cooking
    - Place the ramekins in a dish and pour hot water around them (until halfway up).
    - Bake at 150°C (traditional heat) for 30 to 35 minutes. The flan should remain slightly shaky.
    4. Cool & serve
    - Allow to cool completely, then refrigerate.
    - Turn out just before serving, with the liquid caramel on top.

    THERMOMIX® METHOD
    Thermomix preparation
    1. Caramel
    - Make the caramel as above, in a small saucepan.
    - Pour into the ramekins and leave to set.
    2. The cream of the custard
    - Place the milk and vanilla paste in the bowl.
    3 min / 90 °C / speed 1
    - Add the eggs, yolks and sugar.
    30 sec / speed 4
    - Strain the mixture through a sieve and pour into the ramekins.
    3. Varoma cooking
    - Place the ramekins in the Varoma.
    - Pour 1000 ml of water into the bowl, place in the Varoma and cook.
    30 min / Varoma / speed 1
    4. Cool & serve
    - Remove the ramekins, leave to cool completely, unmould and serve with the melted caramel.
