This menu has been designed so that most of it can be prepared in advance. On the day itself, all you need to do is put the finishing touches to it at your leisure and enjoy the company of your guests.
Creamy herb vinaigrette (traditional method & Thermomix)
Description
This creamy herb vinaigrette is quick, easy and always a favourite. The blend of yoghurt and cream makes it light and delicious, with the freshness of herbs. Perfect with a green salad or mixed salad at a buffet or family meal.

Traditional method
- Finely chop the fresh herbs.
- Crush or finely chop the garlic clove.
- In a bowl, mix the yoghurt, cream, salt, sugar, balsamic vinegar and pepper.
- Add the herbs and garlic and mix well until the sauce is smooth and creamy.

Thermomix method
- Place the herbs in the bowl and chop for 3 seconds on speed 8.
- Add the garlic clove and chop for 5 seconds on speed 5.
- Scrape down the sides of the bowl with the spatula.
- Add the yoghurt, cream, salt, sugar, balsamic vinegar and pepper.
- Blend for 15 seconds on speed 4 until smooth and creamy.

Serve this dressing with a green salad or mixed salad.
