Description

Every now and then, there's a bit of roast chicken left over from Sunday... and far from being a problem, it's a great opportunity! You can use it to make a gourmet salad that doubles up as an ideal sandwich filling, whether for a lunchbox or a picnic. In fact, we love this mix so much that we don't always rely on leftovers: we sometimes cook chicken just to make these delicious sandwiches. They're also perfect in a mini version for an elegant afternoon tea.

  1. TRADITIONAL METHOD
    Preparation (traditional method)
    1. Flake the chicken using two forks (and a knife if necessary).
    2. In a salad bowl, mix the chicken with the mayonnaise, yoghurt, mustard, chopped gherkins, salt and pepper.
    3. Spread two slices of bread with the filling, add the tomato slices and a few leaves of rocket, then close with the other two slices of bread.
    4. For an afternoon tea, remove the crust and cut each sandwich into 4 rectangles.

    THERMOMIX® METHOD
    Preparation (Thermomix method)
    1. Place the gherkins in the bowl and chop for 3 seconds on speed 6. Scrape down the sides and chop again for 2 seconds on speed 6. Set aside.
    2. Add the mayonnaise, yoghurt, mustard, salt and pepper to the bowl. Blend for 5 seconds on speed 3.
    3. Add the shredded chicken and chopped gherkins, then blend for 5 sec / reverse / speed 2.
    4. Spread the bread slices with the filling, add the tomatoes and rocket and close.
    5. Cut the sandwiches into 4 for afternoon tea if desired...
