Description

The sun is out, temperatures are rising, gardens are ablaze with flowers, and smiles are blooming as we enjoy our first outdoor meals. These garlic fan potatoes are one of my favourite vegetarian barbecue side dishes. Delicately flavoured, crispy-melting and easy to prepare, they're always a hit at the table.

  1. TRADITIONAL METHOD
    Preparation
    1. Wash the potatoes and fan them: slice into thin strips without going all the way down so that the base remains intact.
    2. Place each potato on a sheet of aluminium foil.
    3. Mix the finely chopped garlic with the olive oil. Brush each potato generously with this mixture.
    4. Wrap the potatoes individually in aluminium foil.
    5. Cook over hot coals for about 1 hour, turning regularly.

    Time-saving tips
    You can pre-cook the potatoes for 25 minutes in boiling water or steam them before barbecuing. This considerably reduces the cooking time over the coals.
