This recipe has become a firm favourite with us! When I make my chicken meatballs, I always make them in larger quantities so that I can freeze them. That way I always have a quick and tasty solution on hand. Served cold in pita bread, these meatballs are perfect for picnics, kids' lunchboxes or a light but nutritious lunch. With a few crunchy vegetables and a touch of sauce, the result is as simple as it is delicious.

    Preparation - Traditional method
    1. Lightly toast the pita bread to make it easier to open on one side.
    2. Cut the chicken meatballs in half (or leave them whole, as you prefer).
    3. Top the pita with the meatballs, salad leaves and tomato slices.
    4. Add a spoonful of simple red sauce before closing the loaf.
    5. Serve immediately or pack to take on a picnic.
