Description
Easy to prepare, it has an intense flavour of roasted nuts and an irresistible crunchy texture. Perfect for decorating desserts, flavouring ice creams or adding crunch to your desserts, it can be made with a wide variety of nuts: almonds, hazelnuts, pecans, pistachios, cashew nuts... The principle is always the same: roasted dried fruit coated in light-coloured caramel, then finely crushed or ground to a powder. A real classic to have in your baking bases!

- TRADITIONAL METHOD
Preparation - Traditional method
1. Prepare the dried fruit :
- For the almonds: peel and toast them.
- For hazelnuts, walnuts, pecans, pistachios or cashew nuts: simply toast them.
2. Toast in the oven :
- Preheat the oven to 170°C.
- Spread the dried fruit on a baking tray lined with baking paper.
- Grill for around 15 minutes.
3. Prepare the caramel :
- In a heavy-bottomed saucepan, melt the sugar over medium heat, without stirring, until it is liquid and takes on a lovely light caramel colour.
- If the caramel darkens too quickly, briefly plunge the bottom of the pan into cold water to stop it cooking (caramel that is too dark becomes bitter).
4. Assemble :
- Immediately add the hot dried fruit to the caramel.
- Mix thoroughly to coat well.
5. Cool and crush :
- Pour the nougatine onto a sheet of baking paper.
- Leave to cool completely.
- Crush with a knife, grate finely or blend as required.
