Apple Strudel muffins (traditional method & Thermomix)

No autumn without apple strudel!
When the long summer evenings give way to shorter days and cooler evenings, there's nothing like the comforting smell of a strudel baking in the oven.
For those who dare not try their hand at homemade strudel pastry, this filo pastry version is an excellent compromise: crisp, buttery and filled with a mixture of melting apples, cinnamon and fragrant raisins.
In individual portions, these strudel muffins are perfect for an autumn snack, a buffet or even as a dessert with a little whipped cream or vanilla sauce.

TRADITIONAL METHOD
Preparation - Traditional method
1. Prepare the filling: Peel the apples, remove the core and cut into thin strips.
2. Melt 60 g of butter in a frying pan, add the apples, breadcrumbs, sugar, cinnamon and raisins (if using).
3. Cook over a medium heat for about 5 mins, until the apples are tender but still slightly firm. Leave to cool.
4. Prepare the filo sheets: Melt 60 g butter in a small saucepan.
5. Cut each filo sheet into 9 squares measuring approximately 10 x 10 cm (i.e. 36 pieces).
6. Lightly butter the cavities of a muffin tin, place 3 filo squares on top of each other and brush with melted butter for each layer.
7. Spread the filling in the centre, then bake in a preheated oven at 200°C (180°C fan oven) for 10 to 15 minutes, until the edges are golden brown and crisp.
8. Turn out carefully and serve warm or cold, plain or with whipped cream/vanilla sauce.
THERMOMIX® METHOD
Preparation - Thermomix version
1. Place the peeled and quartered apples in the bowl → 3 sec / speed 4.5, transfer.
2. Melt 60 g of butter for 3 minutes at 100°C on speed 2, setting half aside.
3. Add the apples, breadcrumbs, sugar, cinnamon and sultanas to the bowl → 6 min / 120°C / reverse / speed 1, leave to cool.
4. Cut and prepare the filo sheets as in the traditional method, brush with the reserved melted butter.
5. Fill the muffin cups and bake in a preheated oven at 200°C (180°C fan oven) for 10 to 15 minutes.
