The Perfect American

I’m not usually one for breakfast. But during our road trip across the United States, with such packed days, I ended up changing my habits a bit.
It all began in Cape Cod, at the Wee Packet. After a rather disappointing hotel breakfast in Boston, we decided to have breakfast somewhere other than the hotel. From the menu, I chose the The Perfect Wee Packet : a large glass filled with fresh fruit, yoghurt and granola. Simple, but refreshing, delicious and filling enough to get you through a long day.
A week later, in our cabin in the heart of the countryside, I fancied making it again using whatever we had to hand. I used blueberries, raspberries, a few grapes, granola and some vanilla yoghurt. But a good plain yoghurt works just as well: in that case, you can add a drizzle of honey to give it a touch of sweetness.
This is exactly the sort of recipe I love on holiday: No cooking, less than 10 minutes’ preparation, very little washing up and ingredients that are easy to find anywhere. And of course, there’s no need to wait until the holidays to make it: it also makes an excellent breakfast at home or to take to the office.
You can even prepare the fruit and yoghurt the night before. My most important tip: Always keep the granola separate until just before serving. Otherwise, it soaks up the moisture from the yoghurt and loses all its crunch.

- Gently wash the fruit and dry it thoroughly. Cut the grapes in half if they are large.
- Divide the blueberries, raspberries and grapes between the bottoms of four glasses or small clear jars.
- Add a generous spoonful of vanilla yoghurt or plain yoghurt.
- If you want to prepare the parfaits in advance, stop at this stage, cover them and keep them in the fridge.
- Just before serving, sprinkle the granola over the yoghurt so that it stays nice and crunchy.
- If you like, add a drizzle of honey and enjoy straight away.
- The fruit can, of course, vary depending on the season and what you have at home: strawberries, blackberries, peaches or nectarines in summer, apples or pears in autumn and winter…
- The basic idea is always the same: fruit, creamy yoghurt and something crunchy on top. Simple, fresh and delicious — just like the one that had won me over on Cape Cod a week earlier.
