Green beans with garlic
Description
Since I was a teenager, these green beans with garlic have always had a place on my table. It's a recipe I discovered when I was following Harvey Diamond's 'Fit for Life' lifestyle principles - and it won me over straight away. This dish has since survived the years: I serve it as a side dish as well as a main course, especially with a few Provençal-style tomatoes. It's a combination that works wonders! My friends and family love it: green beans with garlic, roasted tomatoes, a little butter flavoured with wild garlic and a few racks of lamb - and you've got a simple but tasty meal.

Traditional preparation
1. Heat the olive oil in a large, deep frying pan over a high heat.
2. Add the minced garlic, then the green beans. Fry for a few minutes over a high heat, stirring frequently to prevent them from burning.
3. Sprinkle with thyme and add a little freshly ground pepper.
4. Pour in the water and add the stock cube. Bring to the boil, cover, reduce the heat and simmer for 20 to 30 minutes, until the beans are soft to the touch.
5. If necessary, add a little water during cooking. Frozen beans only need to be cooked for 10 to 15 minutes.
6. Finish with a drizzle of lemon juice just before serving.
