One Pot Spaghetti Caprese (traditional method & Thermomix)
Description
One Pot Spaghetti Caprese is the perfect example of simple, effective cooking: the pasta, sauce and toppings all cook together in a single pan. The starch released by the spaghetti mixes with the other ingredients to create a creamy, fragrant sauce, all in a minimum of time... and with very little washing up to do! Tip: For a more intense flavour, add a few fresh basil leaves just before serving.

TRADITIONAL METHOD
Preparation - Traditional method
1. In a large non-stick saucepan or casserole dish (about 28 cm in diameter), fry the garlic and onion in a drizzle of oil until translucent.
2. Add olive oil and tomato purée, cook for another minute, stirring continuously.
3. Stir in the chopped tomatoes, water, cream, Laughing Cow cheese, oregano, basil, salt and pepper. Bring to the boil.
4. Add the spaghetti and cook over a medium heat for about 15 minutes, stirring regularly, until al dente and about 2 cm of liquid remains.
5. Stir in the mozzarella, cover and leave to stand for about 5 minutes off the heat, stirring occasionally to melt the cheese.
6. Adjust the seasoning and serve immediately.THERMOMIX® METHOD
Preparation - Thermomix version
1. Place 1 clove of garlic and 1 onion in the bowl and chop for 3 seconds/speed 5. Scrape down the sides.
2. Add 20 g olive oil and 15 g tomato purée, sauté for 2 minutes/100 °C/speed 2.
3. Add 400 g tinned chopped tomatoes, 700 g water, 100 g cream, 50 g cheese, 1 teaspoon oregano, 1 teaspoon basil, 1 teaspoon salt and pepper, bring to the boil for 10 minutes / 100 °C / speed 2.
4. Break 320 g of spaghetti in half and add to the pan. Cook for 5 minutes/100°C/reverse direction/gentle stirring speed.
5. Stir with a spatula, then cook for a further 5 min / 100 °C / reverse direction / gentle stirring speed.
6. Add 300 g mozzarella and cook for another 2 minutes/100 °C/reverse direction/gentle stirring speed.
7. Check the seasoning and serve immediately...
