Description

Liège waffles are not light... but they are absolutely irresistible! My son recently reminded me that I hadn't made any for nearly a year. And yet, outside his school in Brussels, there's a van selling them - at €3.50 each! Homemade, they only cost around €0.40 per waffle, and they're infinitely better: caramelised crust, soft centre, generous butter. No need for whipped cream or chocolate: they're good enough on their own. Fresh from the waffle iron or reheated in the toaster, they're a hit with everyone.

  1. TRADITIONAL METHOD
    Traditional version
    1. Warm the milk in a small saucepan. Remove from the heat, melt the butter in the milk and leave to cool.
    2. Place the flour, baking powder, eggs, vanilla, salt and sugar in a large bowl.
    3. Add the warm milk-butter mixture, then knead for 10 minutes by hand (or 5-7 minutes in a food processor) until you have a soft dough.
    4. Add the pearl sugar and mix evenly.
    5. Cover with a tea towel and leave to rise for 30 minutes in a warm place.
    6. Divide the dough into 10 portions of approximately 120 g each.
    7. Heat the waffle iron and cook each waffle for 3 to 4 minutes, until golden brown and caramelised.

    THERMOMIX® METHOD
    Thermomix version
    1. Place the milk in the bowl.
    → 3 min / 40°C / speed 2
    2. Add the butter and allow to melt slightly.
    3. Add the flour, baking powder, eggs, vanilla, salt and sugar.
    → 5 min / kneading mode
    4. Add the pearl sugar.
    → 2 min / kneading mode
    5. Pour the dough into a bowl, cover and leave to rest for 30 minutes.
    6. Divide into 10 portions (approx. 120 g), then cook in a well-heated waffle iron...
