For the dough, heat milk, soft butter, salt, real vanilla sugar, some lemon and orange zest if you like, yolks and fine crystal sugar to approx. 40 °C and put into the kneading machine or leave in the Thermomix. Can of course also be made by hand.
Add the flour and yeast. Knead everything together into a smooth dough. Cover and leave to rest for 1/2 hour.
Knead again briefly and let rest for another 1/2 hour. Knead the dough briefly, remove from the mixing bowl, cover and leave to rest at the table for another 1/4 hour.
\* If you want to bake a brioche loaf, it is best to put the dough into a rectangular mould.
\* To make plaits, divide the dough into 130 g pieces, shape into rounds, cover and leave to rest for 10 minutes, shape into strands and plait 3 of each.
\* For the Easter nests, join the plaited ends together to "build" a nest, possibly also using a flat piece of dough to build the base.
Let rest for another 10 minutes
Mix egg and yolk and brush the dough with it. Sprinkle with sugar or almonds or leave as is.
Baking temperature: Bake the plaits at 160 °C for about 20 minutes until golden brown. In a loaf tin, the baking time is doubled.
Glaze with reheated apricot jam or sugar syrup as soon as they come out of the oven to give them a nice sheen. Then leave to cool.
If the Easter nests have been made, place eggs (chocolate, sugar or real) in the nest.
