Description

This guacamole is the result of several years' testing and fine-tuning. The result is a simple, balanced recipe in which each ingredient adds its own special touch. Perfect as an aperitif with corn chips, crunchy vegetables or on toast, it can be prepared in just a few minutes and kept for a few hours in the fridge.

  1. TRADITIONAL METHOD
    Preparation - Traditional method
    1. Halve the chilli, remove the seeds and chop finely.
    2. Peel the garlic and mince very finely.
    3. Thinly slice the spring onions.
    4. Squeeze the lime.
    5. Cut the cherry tomatoes into small cubes.
    6. Cut the avocados in half, remove the stone and scoop out the flesh with a spoon.
    7. Mash the avocado flesh with the lemon juice using a fork or blender, until you reach the desired consistency (smooth or slightly coarse).
    8. Season with salt and pepper. Add the chilli, garlic, onion and tomatoes and mix gently.
    9. Leave to stand for 15 minutes before serving to allow the flavours to develop.

    THERMOMIX® METHOD
    Preparation - Thermomix method
    1. Place the garlic and chilli in the bowl and blend for 3 seconds on speed 8.
    2. Add the avocados, halved tomatoes, salt, pepper, spring onion rings and lemon juice. Blend for 6 seconds on speed 5.
    3. For a coarser texture, blend on speed 3 until you reach the desired consistency.
    4. Adjust the seasoning and serve immediately...
