One of my wonderful godmothers - who, along with my parents, taught me to cook and who shares my love of cooking - recently gave me a cookbook that I love. It's called Persiana and it's written by British-Iranian chef Sabrina Ghayour.
I already knew some of the recipes, but this one really appealed to me:
A pistachio-feta dip that's fragrant, quick and full of character.
TRADITIONAL METHOD
Traditional preparation
1. Place all the ingredients in a blender.
2. Blend to a creamy texture, still a little grainy if you like.
3. Adjust the seasoning and texture with a drizzle of oil or a little yoghurt if necessary.
4. Serve chilled with pita bread, raw vegetables or crackers.
THERMOMIX® METHOD
Thermomix® version
1. Place all the ingredients in the Thermomix bowl.
2. Blend for 2 sec / turbo → check texture.
3. Repeat 3-4 times depending on the desired consistency.
4. Serve immediately or keep chilled.
