Description

Tiroler Gröstl is a traditional dish from the Austrian Alps, particularly popular after a day in the mountains. It is generally prepared with boiled potatoes, meat (often leftover roast beef or pork) and onions, all browned in a cast-iron frying pan. To complete this simple, nourishing dish, it is accompanied by fried eggs and a few fresh herbs. In my family, this is a dish that everyone loves - especially my boys! Easy, comforting and ideal for using up leftovers, it goes perfectly with a green salad.

  1. TRADITIONAL METHOD
    Preparation (traditional method)
    1. Wash the potatoes, boil them and then peel them. Leave to cool and cut into slices.
    2. If using roast beef or pork, cut coarsely. Alternatively, replace it with lardons.
    3. Mince the onion and fry in a large frying pan with the olive oil.
    4. Add the potatoes and meat. Season with salt and pepper and fry until the Gröstl is golden brown and crispy.
    5. In a small frying pan, melt the butter, break the eggs and cook them over medium heat.
    6. Serve the pan-fried dish with the fried eggs on top, sprinkle with fresh herbs and serve with a green salad.
