Light carrot soup (traditional & Thermomix)

Ingredients:

Preparation:

In a large pot, fry the onions in the oil until they are translucent.

Add the finely chopped carrots, bay leaves and stock cubes and mix with the onions.

Pour a litre of water over them and cook over a medium heat until the vegetables are soft.

Remove the bay leaves (โ—) and put the soup in the blender. If it is too thick, add a little more water and taste again.


Tip: Instead of carrots, use other vegetables, e.g. broccoli, a mixture of cucumber / spinach, tomatoes, courgettes, asparagus, etc. Don't forget the bay leaves! I guarantee it makes a big difference! You can of course add cream or Boursin cheese for a richer taste if you like!
