For the pancakes let the butter melt slowly in a saucepan. Meanwhile, put the milk, flour, eggs and salt in a bowl.
When the butter has melted, add it and mix with a hand mixer until the dough has a smooth consistency.
Let it rest for 30 minutes and then bake the pancakes one by one in a pancake pan. Set them aside.
For the spinach bring water with a stock cube to the boil and blanch the fresh spinach in it for 2 minutes. Remove it from the pot and drain the spinach. Keep the cooking liquid.
Heat the butter and olive oil in a saucepan and sweat the shallot and garlic clove until translucent, without letting them brown.
Add the cornflour, stirring, then the cream, the cooking water you set aside earlier and the salt, pepper and nutmeg. Cook this mixture to a kind of béchamel.
Add the spinach and puree it with a hand blender.
Take a pancake, put a few spoonfuls of the pureed spinach lengthwise from top to bottom in the middle and fold the other two sides over it.
Place it in a previously greased baking dish and do the same with the other pancakes.
Sprinkle the gruyere cheese on the seam of each pancake and bake them in the oven at 170 C for a few minutes until golden brown.
Serve sprinkled with toasted pine nuts and pepper to taste.
